Extended portraits give a cook's decisions and influences room to develop beyond the beauty of one plate. The craft and collaborators can be absorbing when a career has a clear relationship to its setting. This is the polished, often elite end of the selection, useful for a sustained creative portrait rather than a representative account of restaurant labour or everyday eating.
