Joanne Chang

Chang left a consulting career and worked in restaurant and bakery kitchens before opening Flour in 2000. Her pastry training therefore came before entrepreneurship, rather than being her first occupation. That makes her a useful career-change example: an earlier degree and professional experience did not replace the time needed to learn production, recipes and service in working kitchens.
