Ayran
Ayran is the savoury choice: cold plain yoghurt whisked with water and a small pinch of salt until frothy. Start with equal volumes of yoghurt and water, then thin to your liking. Its tang and gentle creaminess work particularly well beside grilled vegetables, flatbreads or a spicy dinner. Use unsweetened yoghurt, with no fruit or vanilla.
