A capable writer becomes an inexperienced kitchen worker, and the difference matters. Buford follows preparation, repetition and physical exhaustion closely enough to make competence feel acquired rather than bestowed. His later pasta-making and butchery apprenticeships extend that interest in learning with the body. The food world can be flamboyant, but the value here is how much work sits underneath the performance.
