Use the dodge as a way to change the next exchange, rather than constantly backing away. Its follow-up attacks, grabs and throws let you regain control of a crowd without a long memorised sequence. Different Foot Soldiers ask you to change approach instead of repeating the same dive kick. The opening move demonstrations help, and Chill is a sensible first difficulty. It is a more immediate introduction than Fight'N Rage; the busy effects with several players can make careful observation harder.
